Cake batter: Dry ingredients

    Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment, or prepare a 9x13-inch pan.

    In a large bowl, whisk together all-purpose flour, granulated sugar, light brown sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until evenly combined.

    In a separate bowl, whisk the eggs, vegetable oil, vanilla extract, and buttermilk until well combined.

    Stir in the grated carrots and fold in the chopped walnuts with a light coating of flour to prevent sinking.

    Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.

Baking and cooling
