Method
Build & shake
- 1
Prepare and measure
Chill a highball or Collins glass by filling it with ice and set aside. Measure light rum, simple syrup, fresh lime juice, fresh lemon juice, and orange juice into a cocktail shaker.
- 2
Add ice and shake
Fill the shaker with ice (about 3/4 full). Secure the lid and shake vigorously for 10–15 seconds until the shaker exterior is cold and slightly frosted.
- 3
Discard chill ice
Dump the ice from the chilled serving glass.
- 4
Strain
Fine-strain the shaken mixture into the chilled glass filled with fresh ice (large cubes or crushed, depending on preference), leaving room for soda.
Top & finish
- 5
Top the drink with 2 ounces of club soda or sparkling water to give the cocktail lift and a longer finish. Stir gently with a bar spoon two or three times to combine without removing carbonation.
- 6
If using dark rum as a float, pour the dark rum slowly over the back of a spoon onto the surface so it forms a visible layer on top of the drink.
- 7
Garnish with a lime wheel on the rim, a sprig of mint tucked into the glass, and/or an expressed orange peel. Rub the citrus peel around the rim before dropping it in for aromatic lift.
Serve
- 8
Serve immediately with a straw and a small napkin. Encourage guests to stir the float in if they prefer a uniformly mixed cocktail.
