    Pat the ahi dry with paper towels. Trim any sinew or discolored edges. Season all sides lightly with kosher salt and freshly ground black pepper; set on a plate.

    Mix the white and black sesame seeds on a shallow plate or rimmed baking sheet so they are evenly combined.

    Whisk together soy sauce, mirin, rice vinegar, sesame oil, lime juice, brown sugar (or honey), grated ginger, minced garlic, and optional chili flakes in a small bowl. Taste and adjust balance — you want a salty-sweet-tangy finish. Reserve half the sauce for serving and set the other half aside for brushing while searing.

Coating & Searing

    Brush the sides of the seasoned tuna lightly with the reserved soy-mirin mixture (the portion set aside for brushing). Press each side of the tuna into the sesame seed mixture so seeds adhere evenly, covering top, bottom, and sides as you prefer. Press gently so the sesame forms a crust but the tuna remains raw inside.

    Heat a heavy skillet (cast iron recommended) over high heat until very hot, about 2–3 minutes. Add the neutral oil and swirl to coat. The pan should be shimmering but not smoking heavily.

    Place the sesame-coated tuna in the skillet. Sear without moving for 30–40 seconds for a rare center (adjust to 45–60 seconds per side for medium-rare; do not overcook—ahi is best with a rare center). Using tongs, sear the opposite face for the same amount of time. Also quickly sear the narrow sides for 10–15 seconds each to ensure an even crust.

    Remove the tuna to a cutting board and let rest 1–2 minutes. Resting keeps the center cool and prevents carryover cooking from overcooking the fish.

To Serve

    Using a very sharp knife, slice the tuna crosswise into 1/4-inch to 1/2-inch slices. Wipe the knife between passes to get clean edges.

    Arrange slices on a platter or individual plates. Drizzle reserved sauce over the slices or serve it on the side. Optionally, finish with a light drizzle of toasted sesame oil for aroma.

    Garnish with thinly sliced scallions and pickled ginger or cucumber. Serve immediately with extra soy-mirin dipping sauce and steamed rice or a simple salad, if desired.
