Prepare dry ingredients
In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 2 teaspoons granulated sugar, and 1 teaspoon fine sea salt until evenly combined and aerated.

Melt butter
Place 3 tablespoons unsalted butter in a small heatproof bowl and melt gently in the microwave (15–30 seconds) or in a small saucepan over low heat. Let cool slightly so it is warm but not hot.

Combine wet ingredients
In a separate bowl or large measuring cup, beat 2 large eggs, then whisk in 1 1/4 cups whole milk and 1 teaspoon vanilla extract (optional) until smooth.

Make the batter
Create a well in the center of the dry ingredients. Pour in the wet mixture and the warm melted butter. Stir gently with a spatula or wooden spoon just until combined; a few small lumps are fine. Do not overmix to keep the final texture tender.

Rest the batter
Let the batter rest for 5–10 minutes at room temperature. This allows the flour to hydrate and the baking powder to start working, producing a lighter result.

Cook
For each pancake or portion, pour about 1/4 cup batter onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook the second side for 1–2 minutes until golden brown and cooked through. Adjust heat as needed so the pancakes cook through without burning.

Keep warm
If making multiple batches, place finished pancakes on a baking sheet in a single layer in a 200°F (95°C) oven to keep warm while you cook the rest.
