Bring to room temperature & dry
Remove the steaks from the refrigerator 30–60 minutes before cooking to come closer to room temperature. Pat both sides and the edges very dry with paper towels — moisture prevents a good sear.

Season
Generously season both sides and the edges of the steaks with kosher salt (about 1 tablespoon per side total for both steaks) and then freshly ground black pepper. Press the seasoning into the meat so it adheres.

Add oil and sear
Add the neutral oil and swirl to coat. Place the steaks in the pan away from you so they don't splatter; do not move them. Sear on the first side for 2½–3½ minutes until a deep brown crust forms (time varies with thickness — aim for a dark crust without burning).

Flip and add aromatics
Flip the steaks and immediately add the unsalted butter, smashed garlic cloves, and herb sprigs to the pan. Tilt the pan slightly and use a spoon to baste the steaks continually with the melted butter and rendered juices for 2–3 minutes to develop flavor and finish cooking.

Check doneness
Use an instant‑read thermometer inserted into the center (not touching bone) to check temperature: 120–125°F for rare, 130–135°F for medium‑rare, 140–145°F for medium. For a typical 1–1¼ inch New York strip, aim for 130°F (medium‑rare). Remove steaks from the pan 5°F below target temperature — they will carry over cook while resting.

Transfer the steaks to a warm plate or cutting board and tent loosely with foil. Let rest for 5–10 minutes so juices redistribute.

Finish with butter and serve
Top each steak with about 1/2 tablespoon of room‑temperature butter and a light sprinkle of flaky sea salt if desired. Slice against the grain into 1/4‑inch slices or serve whole with lemon wedges or chimichurri on the side. Spoon any accumulated juices from the cutting board over the steak and serve immediately.
