Mac 'n Cheese Bites

    Cook the pasta

    Bring 6 cups water to a rolling boil in a medium pot. Add 1 tsp salt and the elbow macaroni. Cook until just al dente (about 6–7 minutes). Drain thoroughly and return to the pot; spread slightly so excess steam escapes and the pasta cools a bit (2–3 minutes).

    Make the cheese sauce (roux and sauce)

    In a medium saucepan over medium heat, melt 2 tbsp unsalted butter. Stir in 2 tbsp flour and cook, stirring, for 1 minute to form a blond roux. Gradually whisk in 1 cup whole milk until smooth. Continue to cook and whisk until sauce thickens and coats the back of a spoon, about 3–4 minutes. Reduce heat to low and whisk in 2 tbsp cream cheese until melted. Add 1.5 cups shredded sharp cheddar and 0.5 cup shredded monterey jack a handful at a time, stirring until smooth. Stir in 0.5 tsp dry mustard, 0.25 tsp black pepper, 0.25 tsp salt, and 2 tbsp grated parmesan. Remove from heat and fold in 1 tbsp minced chives if using.

    Combine pasta and sauce

    Pour the cheese sauce over the drained pasta. Stir until macaroni is evenly coated. Allow mixture to cool 8–10 minutes (so it’s warm, not hot).

    Bind and chill

    Beat 1 large egg and fold it into the cooled mac and cheese to help bind. Taste and adjust salt/pepper. Transfer the mixture into a shallow container and refrigerate for at least 30 minutes (this firms the mixture for shaping).

    Form the bites

    Set up a dredging station: 0.5 cup flour in one bowl, the beaten egg (reserve small amount of fresh beaten egg if needed) in a second bowl (or use the same egg after adding 1 tsp water to thin), and a mixture of 1 cup panko + 0.5 cup seasoned breadcrumbs in a third bowl. Use a small cookie scoop or two spoons to portion about 1–1.5 tbsp of chilled mac and cheese per bite; press gently into compact rounds or balls with your hands (lightly wet hands to prevent sticking). Dredge each ball in flour, shake off excess, dip in beaten egg, then roll in the panko/breadcrumb mix to coat thoroughly. Place on a baking sheet while you prepare oil.

    Fry (or bake) the bites

    For frying: In a wide skillet heat about 1 cup vegetable oil over medium heat to 350°F (175°C) — you should be able to maintain temperature so bites sizzle but don’t burn. Fry batches of 6–8 for 2–3 minutes per side, turning carefully, until golden brown and crispy. Transfer to a paper-towel-lined tray and keep warm in a 200°F (95°C) oven while finishing remaining batches. For baking (lighter option): place coated bites on a parchment-lined sheet, spray with cooking oil, and bake at 400°F (200°C) for 12–15 minutes, flipping halfway, until golden and crisp.

    Finish and garnish

    Sprinkle freshly grated parmesan or extra chopped chives over the hot bites. Let rest 1–2 minutes, then serve warm with Sriracha Ranch for dipping.

Sriracha Ranch

    Make the sauce: In a small bowl whisk together 1/2 cup mayonnaise, 1/4 cup sour cream and 2 tbsp buttermilk until smooth. Add 2 tsp sriracha (or more to taste), 1 tbsp ranch seasoning (or the suggested dried herbs/spices), 1 tsp fresh lemon juice, 1/8 tsp salt, and 1/8 tsp black pepper. Stir in 1 tbsp minced fresh chives. Taste and adjust heat or salt. Chill at least 10 minutes to let flavors meld. Serve alongside warm mac 'n cheese bites.
