Cocktail Base

Bitters & Aromatics

Method

Cocktail Base

  1. 1

    Measure and Combine

Measure and pour the gin, fresh lemon juice, fresh lime juice, orange curaçao and simple syrup into a cocktail shaker.

  2. 2

    Add Egg White (optional)

If using egg white for a silky froth, add the whole egg white into the shaker now. This step is optional but recommended for texture.

Bitters & Aromatics

  1. 3

Add 2 dashes of orange bitters to the shaker with the other liquid ingredients.

Shaking

  1. 4

    Dry Shake

Seal the shaker and shake vigorously without ice for 10–15 seconds if you used egg white. This 'dry shake' emulsifies the egg and builds foam.

  2. 5

    Wet Shake

Open the shaker, add the ice (for shaking) and secure again. Shake very hard for 10–15 seconds until the outside of the shaker becomes frosty and well-chilled.

Strain & Serve

  1. 6

Double-strain the cocktail through a fine mesh strainer into a chilled coupe or rocks glass over fresh ice (if you prefer it on the rocks) or without ice for a neater presentation.

  2. 7

Add 1 dash of Angostura bitters on top of the foam (if present) and, using a toothpick, gently swirl to create a small pattern if desired.

  3. 8

Garnish with a lemon twist and a sprig of fresh thyme or mint clipped into the rim or floated on the foam. Serve immediately.
