Prepare salmon
Pat the salmon fillets dry with paper towels. Check for pin bones and remove with fish tweezers if needed. Place fillets skin-side down on a baking sheet or tray.

Make marinade
In a small bowl, smash or finely mince the garlic. Whisk together olive oil, lemon juice, minced garlic, Dijon mustard, honey, chopped fresh dill, kosher salt, and black pepper until combined.

Marinate
Brush or spoon about half of the marinade over the flesh side of each fillet (reserve the other half for basting/finishing). Let sit at room temperature for 15 minutes or refrigerate for up to 30 minutes. Do not marinate more than 30 minutes so the acid doesn't start 'cooking' the fish.

Cook salmon
Place the salmon fillets on the grill skin-side down. Close the lid and cook undisturbed for 4–6 minutes depending on thickness (about 1-inch thick). The salmon should release easily when the skin is crisp and seared. Flip carefully using a wide spatula and cook flesh-side down for 1–3 minutes more until the internal temperature reaches 125–130°F (52–54°C) for medium-rare to medium, or longer to desired doneness.
