Angus Beef Patty (serves 4)

Method

Angus Beef Patty (grill method)

    Prepare the meat

    Place ground Angus beef in a bowl. Add kosher salt, black pepper, Worcestershire sauce and garlic powder. Gently fold the seasonings into the meat with your hands or a spatula—do not overwork (mixing too much makes dense patties).

    Form patties

    Divide the mixture into 4 equal portions (about 4 oz / 115 g each). Lightly shape each into a patty about 3/4-inch thick and slightly wider than the bun. Make a shallow indentation in the center of each patty with your thumb to reduce puffing during cooking.

    Preheat grill

    Preheat a grill or grill pan to medium-high (about 400°F / 200°C). Oil the grates or brush the patties lightly with neutral oil to prevent sticking.

    Grill patties

    Place patties on the hot grill. Cook 3-4 minutes per side for medium-rare to medium (internal temp 130–140°F / 55–60°C). For medium-well, cook 4–5 minutes per side (150–155°F / 65–68°C). Do not press down on the patties. If adding cheese, place a slice on each patty during the last 30–60 seconds and close grill lid to melt.

    Rest and assemble

    Transfer patties to a plate and rest 3–5 minutes to allow juices to redistribute. Toast buns on the grill for 20–30 seconds if desired. Assemble with lettuce, tomato, onion, pickles and sauces of choice.

Veggie Patty (pan or grill)

    Prepare flax egg (if using)

    If making vegan patties, combine 1 tablespoon ground flaxseed with 3 tablespoons water in a small bowl. Stir and let sit 5 minutes until gelatinous. Otherwise use 1 chicken egg.

    Combine ingredients

    In a medium bowl, mash the cooked black beans with a fork or potato masher until mostly broken down but with some texture. Add grated carrot, chopped onion, oats (or panko), cumin, smoked paprika, soy sauce, lime juice, egg or flax egg, salt and pepper. Stir until well combined. Let rest 5 minutes to allow oats to absorb moisture.

    Form patties

    Divide mixture into 4 equal portions and shape into patties about 3/4-inch thick. If mixture is too wet, add up to 2 tablespoons additional oats or panko; if too dry, add 1–2 teaspoons water.

    Cook patties

    Heat a heavy skillet or grill pan over medium heat and add 1 tablespoon oil. When oil shimmers, add patties and cook 4–5 minutes per side until browned and firm (internal temp not required for veggie patties, but they should be hot through). If using a grill, oil the grates and grill 3–4 minutes per side, taking care that they don’t fall apart.

    Rest and assemble

    Transfer to a plate and rest 2 minutes. Toast buns if desired and assemble with desired toppings and sauces.

Optional toppings & serving

    Toast buns cut-side down for 20–30 seconds on the grill or in the skillet until lightly golden. Spread mayonnaise, ketchup or mustard on buns as desired. Place lettuce on bottom bun, add burger patty, then tomato, onion and pickles. Top with the bun crown and serve immediately.
