Burgers

Method

Burgers

  1. 1

    Form patties

If using loose ground Angus beef, divide into two equal portions (each ~0.5 lb for single burger as listed; adjust if making two). Gently form into a patty about 3/4-inch thick and slightly wider than the bun, taking care not to overwork the meat. Make a shallow 1/2-inch-wide dimple in the center of each patty with your thumb to prevent bulging during cooking. If using pre-formed Beyond Meat patties, proceed to seasoning step.

  2. 2

    Season

Lightly brush both sides of the patty with vegetable oil. Season both sides evenly with fine sea salt and freshly ground black pepper immediately before cooking.

  3. 3

    Preheat grill or skillet

Preheat a gas or charcoal grill to medium-high heat (about 400°F / 200°C) or heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Lightly oil grates or pan.

  4. 4

    Cook patties

Place the patty on the hot grill or skillet. For a 1/2 lb Angus patty: grill 4-5 minutes per side for medium (internal temp 140–145°F / 60–63°C), slightly longer for medium-well. For Beyond Meat: cook 3-4 minutes per side or until nicely browned and cooked through, following package guidance. Flip only once using a spatula. If adding cheese, place cheese slice on the patty in the last 1 minute of cooking and close grill lid or cover skillet to melt.

  5. 5

    Rest

Transfer cooked patty to a plate and let rest for 3 minutes to redistribute juices (rest slightly less for plant-based patties).

Buns & Spread

  1. 6

While patties cook, split buns and lightly butter cut sides. Toast cut sides on the grill or in a skillet over medium heat until golden and crisp, about 1–2 minutes. Mix mayonnaise and mustard together; spread on bottom bun. Spread a little buttered side or mayo on top bun if desired.

Toppings

  1. 7

Assemble the burger: place lettuce on the bottom bun to create a moisture barrier, add the cooked patty (cheese side up if added), top with sliced tomato and a few rings of red onion. Add avocado slices if using and top with crisp smoked bacon if desired. Finish with the top bun and serve immediately.

  2. 8

Serve suggestions: Offer ketchup, extra mustard, pickles or fries on the side. For multiple orders, adjust ingredient quantities proportionally (the recipe lists ingredients for 2 burgers/buns but a single 1/2 lb patty—scale as needed).
