Citrus-Agave Syrup

Method

Citrus-Agave Syrup

  1. 1

    Make syrup

Combine fresh lime juice, fresh lemon juice, agave syrup, and water in a small saucepan or heatproof jar. Warm gently over low heat just until the agave thins and the mixture is homogeneous (do not boil) — about 2–3 minutes if heating. Alternatively, shake vigorously in a sealed jar for 30 seconds if you prefer no heat. Let cool to room temperature.

  2. 2

Taste and adjust: the syrup should be bright and slightly sweet. If it’s too tart, add up to 1 tablespoon more agave; if too sweet, add a tablespoon more lime juice. Reserve at room temperature or chill briefly—this recipe yields about 1 1/2 cups and you will use roughly 3 tablespoons per serving.

Mocktail Base

  1. 3

    Prepare glasses (optional salt rim)

If salting the rim, rub the rim of each serving glass with a lime wedge, then dip into coarse salt placed on a small plate. Fill each glass with about 1 cup of ice cubes.

  2. 4

    Assemble each serving

For each 12 fl oz serving: add 3/4 tablespoon (about 11 ml) citrus-agave syrup to the glass over ice. Squeeze one lime wedge into the glass and drop the wedge in. Pour 12 fl oz chilled non‑alcoholic lager into the glass gently (tilt the glass to keep foam low). Top with 4 fl oz chilled sparkling water to achieve a light spritz and approximate the mouthfeel of a Corona with mixer.

  3. 5

    Finish and garnish

Give the drink one gentle stir with a bar spoon to incorporate the syrup without losing carbonation. Garnish each glass with a lime slice and an optional mint sprig. Serve immediately.

  4. 6

Batch note: To make 4 servings (the ingredient quantities above): make the full citrus-agave syrup and divide as 3 tablespoons syrup per glass. Pour 24 fl oz non-alcoholic lager and 8 fl oz sparkling water across four prepared glasses (or combine in a pitcher and gently stir, then pour over ice).
