    Prepare bacon and toast bread

    Cook bacon until crisp using a skillet over medium heat or in the oven at 400°F (200°C) for 12–15 minutes. Drain on paper towels. Meanwhile, butter one side of each of the three bread slices (about 1 tbs butter total). Toast the buttered sides in a clean skillet over medium heat or in a toaster oven until golden and crisp, about 2–3 minutes per side. Set toasted bread aside, buttered side down.

    Prepare tomato and season

    Slice tomato into 3 even slices. Lightly season tomato slices with a pinch of salt (about 1/8 tsp) and a few grinds of black pepper. Pat slices dry with paper towel if they release excess juice.

    Assemble first layer (bottom)

    Take one slice of toasted bread and place it on a clean work surface, untoasted side up (toasted side down). Spread about 1 tablespoon of mayonnaise evenly over the top surface. Arrange half of the turkey (about 1.5 oz) in an even layer, then place one lettuce leaf on top of the turkey and add one tomato slice.

    Assemble middle layer

    Place the second slice of toasted bread on top of the first layer, toasted side up. Spread the top (untoasted) side of that middle slice with the remaining 1 tablespoon mayonnaise and the optional Dijon mustard (1 tsp) if using. On top of that, layer the ham (2 oz), the remaining turkey (1.5 oz), and the crisp bacon strips (3). Add the second lettuce leaf on top of the bacon.

    Finish sandwich

    Top with the third slice of toasted bread, toasted side up. Press down gently to compact the sandwich slightly. Using a sharp knife, cut the sandwich diagonally into two triangles (or into quarters) so each serving shows layered cross-sections. If desired, secure each half with a toothpick and garnish with a pickle spear or pickle chips on the side.

    Arrange sandwich halves on a plate with pickles. Serve immediately while bread is warm and bacon is crisp. Enjoy.
