Heat oil and test
Use a large, heavy-bottomed pot with a tight-fitting lid (3–4 quart). Add 2 tablespoons neutral oil and heat over medium. Drop in three popcorn kernels and cover. When those test kernels pop, the oil is at the right temperature (about 400°F/200°C).

Pop the kernels
Add the remaining 1 cup popcorn kernels in an even layer. Cover the pot, remove from heat for 10 seconds to let all kernels come closer to temperature, then return to medium-high heat. Gently shake the pot back and forth over the burner so kernels heat evenly and don't burn. As popping begins, keep the lid slightly ajar to allow steam to escape (preventing soggy popcorn). Continue shaking occasionally until popping slows to 2–3 seconds between pops, about 2–3 minutes total.

Finish base seasoning
Immediately remove pot from heat. Transfer popcorn to a large bowl. While still hot, sprinkle 1 teaspoon fine sea salt over the popcorn and toss or gently shake the bowl to distribute evenly.

Butter & Parmesan (savory classic)
If using butter and Parmesan: drizzle the 2 tablespoons melted butter evenly over the hot popcorn, then sprinkle 2 tablespoons grated Parmesan and 1 teaspoon freshly cracked black pepper. Toss thoroughly so the cheese melts slightly and coats the popcorn.

Smoky-spicy
For a smoky, spicy bowl: sprinkle 1 teaspoon smoked paprika, 1/2 teaspoon fine sea salt (reduce from base if desired) and 1/4–1/2 teaspoon cayenne (to taste) over the popcorn. Toss to coat evenly. Optionally finish with a light drizzle (about 1 teaspoon) of toasted sesame oil for a deeper aroma.

Sweet-salty
For a sweet-salty variation: in a small bowl combine 1 tablespoon brown sugar and a pinch (about 1/8 teaspoon) of the fine sea salt (or reduce base salt). Sprinkle the mix over the warm popcorn and toss quickly so the sugar melts slightly and clings to the kernels. Finish with a pinch of flaky finishing salt (about 1/4–1/2 teaspoon) for contrast.

For a bright herb option: sprinkle 1 teaspoon crushed dried rosemary, 1 tablespoon chopped fresh parsley and 1/2 teaspoon lemon zest over the popcorn. Toss to distribute and finish with flaky salt to taste.

Taste and adjust seasoning: add more salt, pepper, or any of the seasoning components to your taste. If you used butter, toss again to ensure even coating. Transfer to a serving bowl and, if desired, finish with a light sprinkle of flaky finishing salt and a few extra cracks of black pepper or a pinch of lemon zest for brightness.
