Heat oil
Use a large (4–6 quart) heavy-bottomed pot with a tight-fitting lid. Place pot on medium-high heat and add 2 tablespoons neutral oil. Drop 2–3 popcorn kernels into the oil and cover.

Pop kernels
When the test kernels pop (about 1–2 minutes), add the remaining 1 cup of popcorn kernels in an even layer. Cover, remove pot from heat for 10 seconds to let kernels reach a uniform starting temperature, then return to heat. Keep lid slightly ajar or use the vent to allow steam to escape so popcorn stays crisp.

Shake and listen
Gently shake the pot every 15–20 seconds to prevent burning and ensure even popping. When popping slows to about 2 seconds between pops, remove the pot from heat and immediately transfer popcorn to a very large bowl to avoid sogginess from residual steam.

Season with salt
While the popcorn is still hot, sprinkle 1 teaspoon coarse kosher salt over it and toss or use two large spoons to gently toss so salt distributes evenly.

Butter-Parmesan (savory)
Melt 2 tablespoons unsalted butter in a small saucepan or microwave until fully liquid. Drizzle melted butter evenly over the hot popcorn while tossing. Immediately sprinkle 3 tablespoons grated Parmesan and 1 teaspoon garlic powder over the popcorn and toss until evenly coated. Finish with 1/4 to 1/2 teaspoon freshly ground black pepper to taste.

Smoky-Spicy
Instead of butter, sprinkle 1 teaspoon smoked paprika and 1 teaspoon chili lime seasoning over the popcorn (or 1 tsp chili powder plus the zest of half a lime). Toss well. If you like a touch of sweetness, add 1 teaspoon brown sugar and toss again. Squeeze 1 tablespoon fresh lime juice over the popcorn and toss for a bright finish.

If using garnishes, sprinkle 1 tablespoon chopped fresh cilantro, 2 tablespoons thinly sliced scallions, or 1 teaspoon toasted sesame seeds over the finished popcorn and toss gently to distribute. Taste and adjust salt, butter, or spice level.

Transfer popcorn to a large serving bowl or divide into individual bowls for happy hour. Serve immediately for best crunch. Leftovers can be stored in an airtight container at room temperature for up to 2 days; re-crisp in a 300°F (150°C) oven for 5–7 minutes if needed.
