Method
Prep
- 1
Drain and chop artichokes
Drain the canned artichoke hearts well in a fine-mesh sieve, pressing gently to remove excess liquid. Pat dry with paper towels. Coarsely chop into roughly 1/2-inch pieces and set aside.
- 2
Soften cream cheese
Remove the cream cheese from the fridge 20–30 minutes before starting, or microwave in 10-second bursts until soft but not melted so it can be easily whipped into the mixture.
- 3
Preheat the oven to 375°F (190°C). If serving in a shallow ovenproof dish, grease it lightly with 1 teaspoon olive oil.
Make the Dip
- 4
Mince garlic
Peel and mince the garlic finely (or grate it with a microplane) so it disperses evenly through the dip.
- 5
Combine base ingredients
In a medium mixing bowl, beat the softened cream cheese with a hand mixer or sturdy whisk until smooth. Add the sour cream, mayonnaise, grated Parmesan, 1 cup shredded mozzarella, lemon juice, olive oil, salt, black pepper, and red pepper flakes (if using). Mix until fully combined and creamy.
- 6
Fold in artichokes and garlic
Stir the chopped artichoke hearts and minced garlic into the cream mixture until evenly distributed. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
Bake & Finish
- 7
Assemble for baking
Spoon the dip into the prepared ovenproof dish (an 8-inch round or similar shallow baking dish works well), smoothing the top. Sprinkle the reserved 1/2 cup shredded mozzarella and 1 tablespoon grated Parmesan evenly over the surface.
- 8
Bake
Bake in the preheated 375°F (190°C) oven until the dip is bubbling around the edges and the top is golden, about 20–25 minutes. If you prefer a browner top, place under the broiler for 1–2 minutes—watch closely to prevent burning.
- 9
Serve
- 10
Serve warm with toasted baguette slices or crostini and vegetable sticks for dipping. Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in a 350°F (175°C) oven until warmed through.
