Cooking Instructions

  1. 1

    Prepare the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the pan and let drain on paper towels. Once cool, crumble into bits.

  2. 2

    Cook the Spaghettini

In a large pot of salted boiling water, cook the spaghettini according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

  3. 3

    Brown the Butter

In the same skillet used for bacon, melt the butter over medium heat. Continue cooking until it turns golden brown and smells nutty, about 5-7 minutes.

  4. 4

    Sear the Scallops

Pat the scallops dry, season with salt and pepper. In the browned butter, add the scallops and sear for about 2-3 minutes on each side until golden brown. Remove and set aside.

  5. 5

    Make the Sauce

To the skillet, add lemon juice and balsamic vinegar. Stir to combine and let simmer for 2 minutes. If needed, add a little reserved pasta water to thin out the sauce.

  6. 6

    Combine Everything

Add the cooked spaghettini to the skillet, tossing to coat in the sauce. Gently fold in the scallops, bacon bits, and almonds. Adjust seasoning with salt and pepper to taste.

  7. 7

    Serve

Plate the spaghettini and top with grated Parmesan cheese. Serve immediately.
