Preparation and Baking
Prepare the Oven
Preheat your oven to 325°F (160°C).
Mix the Base
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and beat until well combined. Mix in the sour cream, vanilla extract, and salt.
Add Eggs
Add the eggs one at a time, mixing well after each addition. Don't overmix.
Incorporate Flour
Sift the flour over the mixture and fold it in gently until just combined.
Prepare the Pan
Grease a 9-inch springform pan and pour the cheesecake batter into it. Smooth the top with a spatula.
Bake
Bake the cheesecake in the preheated oven for 50-60 minutes or until the edges are set but the center is still slightly jiggly.
Cool and Chill
Turn off the oven and let the cheesecake cool for 1 hour in the oven with the door slightly open. Then refrigerate for at least 4 hours, preferably overnight.
