    Prepare the Lobster

    Preheat the broiler. Slice the lobster tails down the middle and brush with olive oil. Broil for about 5-7 minutes until the meat is opaque and cooked through.

    Cook the Andouille

    In a large skillet or Dutch oven, heat olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.

    Sauté the Vegetables

    Add the diced onion, bell pepper, and celery to the skillet. Cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Combine Ingredients

    Stir in the rice, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until the rice is tender.

    Add Seafood

    Once the rice is cooked, gently fold in the shrimp and crawfish tails. Cook for an additional 5 minutes until heated through.

    Serve

    Remove bay leaves, serve the jambalaya hot topped with broiled lobster and garnish with diced green onions.
