Prepare the Chicken
Preheat the oven to 200°C (400°F). Season the chicken breasts with olive oil, salt, and black pepper. Place on a baking sheet and roast for 20-25 minutes or until cooked through. Let it rest before slicing.

Cook the Gnocchi
In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the top. Drain and set aside.

Make the Sauce
In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the limoncello and simmer for 2-3 minutes to reduce slightly.

Combine Everything
Add the cooked gnocchi to the skillet, tossing to coat in the sauce. Stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper as needed.

Slice the roasted chicken and serve on a plate with the limoncello gnocchi. Garnish with additional parsley and Parmesan if desired.
