Prepare the Ingredients
Chop the onion and garlic finely. Halve the cherry tomatoes and set aside. Rinse the spinach and pat dry.

Cook the Beef Tips
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef tips, season with salt and pepper, and sear until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of olive oil. Sauté the chopped onion and garlic until translucent, about 3-4 minutes. Add the cherry tomatoes and spinach, and cook until the spinach wilts.

Cook the Gnocchi
In a pot of boiling salted water, cook the gnocchi according to package instructions until they float to the top, about 2-3 minutes. Drain and set aside.

Prepare the Gorgonzola Sauce
In a small saucepan over low heat, melt the gorgonzola cheese with a splash of water or cream, stirring until smooth. Season with black pepper.
