1. Marinate the Steak
In a bowl, mix together olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper. Add the flank steak and marinate for at least 30 minutes, preferably overnight.
2. Prepare Chimichurri Sauce
Chop the fresh herbs finely and mix them with olive oil, vinegar, minced garlic, and salt in a bowl. Set aside.
3. Roast the Tomatoes
Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, sprinkle with salt, and roast for 15-20 minutes until blistered.
4. Cook the Steak
Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest for 5 minutes before slicing.
5. Assemble the Sandwich
Slice the ciabatta buns in half. Spread Kewpie mayo on the bottom half, layer with sliced steak, chimichurri sauce, and roasted cherry tomatoes. Top with the other half of the bun.
