BEGINNINGS

  1. 1

    Prepare the Chicken

Place the whole Amish chicken in a large pot and cover it with 8 cups of chicken broth. Bring to a boil over medium heat.

  2. 2

    Cook the Chicken

Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 1 hour or until the chicken is cooked through and tender.

  3. 3

    Remove the Chicken

Carefully remove the chicken from the pot and let it cool. Once cooled, shred the meat into bite-sized pieces, discarding the skin and bones.

  4. 4

    Sauté the Vegetables

In the same pot, add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are softened.

  5. 5

    Add Shredded Chicken and Noodles

Return the shredded chicken back to the pot with the vegetables. Then, add the torn egg noodles and stir to combine.

  6. 6

    Season the Soup

Season the soup with salt and black pepper to taste. Bring the mixture back to a gentle boil.

  7. 7

    Simmer the Soup

Reduce the heat and let the soup simmer for an additional 10-15 minutes, or until the noodles are tender.

  8. 8

    Finish and Serve

Stir in the chopped fresh parsley before serving. Ladle the soup into bowls and enjoy your homemade chicken noodle soup.
