Prepare the Pickles
Drain the pickle slices and pat them dry with paper towels to remove excess moisture.

Make the Batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually pour in the beer while whisking until smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Pickles
Dip each pickle slice into the batter, allowing excess to drip off, then carefully place them into the hot oil. Fry in batches, turning occasionally, until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Smoked Serrano Aioli

Combine Ingredients
In a small bowl, combine mayonnaise, finely chopped smoked serrano pepper, minced garlic, and lemon juice. Mix well until all ingredients are thoroughly blended.

Add salt to taste and adjust the seasoning according to preference. Mix well.
