    Prepare the Zucchini

    Slice the zucchini into thin rounds, about 1/4 inch thick. Lightly salt the slices and let them sit for 15 minutes to draw out moisture.

    Cook the Zucchini

    Heat a skillet over medium-high heat. Add a drizzle of olive oil. Once hot, add the zucchini slices in a single layer. Cook for 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.

    Prepare the Ciabatta

    Toast the ciabatta slices until golden brown and crispy. You can use a toaster or a grill pan.

    Slice the Red Onion

    Thinly slice the red onion and set aside.

PECORINO AIOLI

    Make the Aioli

    In a bowl, combine the mayonnaise, grated pecorino cheese, minced garlic cloves, lemon juice, salt, and black pepper. Whisk until smooth and creamy. Taste and adjust seasoning if needed.

ASSEMBLY

    Assemble the Sandwich

    On one slice of toasted ciabatta, spread a generous layer of pecorino aioli. Layer with crispy zucchini, burrata cheese, fresh basil, arugula, and red onion slices. Top with another slice of ciabatta.

    Cut the sandwich in half and serve immediately while the zucchini is still crispy and the cheese is fresh.
