Method

Preparation

  1. 1

    Peeling the Potatoes

Begin by peeling the Idaho Gold potatoes and cutting them into quarters to ensure even cooking.

  2. 2

    Boiling the Potatoes

Place the diced potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water. Bring to a boil over high heat, then reduce to medium heat and allow to simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Mixing and Whipping

  1. 3

    Draining the Potatoes

Once the potatoes are cooked, drain them in a colander and return them to the pot.

  2. 4

    Adding Butter and Cream

Add the 1 cup of butter and 1 cup of heavy cream to the drained potatoes.

  3. 5

    Whipping

Using a potato masher or electric mixer, whip the potatoes until they reach a creamy, fluffy consistency. Be careful not to over-mix to avoid a gummy texture.

  4. 6

    Seasoning

Add 1 teaspoon of black pepper and adjust salt to taste. Mix until the seasonings are incorporated.
