Method

Prepare the Burger Patty

    Form the Patty

    In a large bowl, combine the Wagyu beef, salt, and black pepper. Mix gently to avoid overworking the meat. Form the mixture into two equal patties, making a slight indentation in the center of each.

    Cook the Patty

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium-rare, adding the aged cheddar cheese on top during the last minute of cooking to melt.

Prepare the Toppings

    Cook the Bacon

    In a skillet over medium heat, cook the Old Major pepper bacon until crispy, about 5-7 minutes. Place on a paper towel to drain excess grease.

    Prepare Onion Jam

    If using store-bought onion jam, skip this step. Otherwise, cook sliced onions in a pan with a bit of oil over low heat, stirring occasionally until caramelized (about 20 minutes).

Assemble the Burger

    Toast the Buns

    Lightly butter the brioche buns and toast them on the grill or in a skillet until golden brown.

    Build the Burger

    On the bottom half of each toasted brioche bun, layer the Wagyu patty with melted cheddar, crispy bacon, a generous spoonful of onion jam, and a few bread & butter pickles. Top with the other half of the bun.

Prepare the French Fries

    Cut the Potatoes

    Wash and cut the Russet potatoes into thin strips for frying.

    Fry the Potatoes

    Heat oil in a deep fryer or a large pot to about 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown, about 4-5 minutes. Remove from the oil and drain on paper towels. Season with salt to taste.
