Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide, to create fries.

Soak the Fries
Place the cut fries in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps in achieving a crispier fry.

Dry the Fries
After soaking, drain the water and pat the fries dry with paper towels to remove moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the dried fries to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, drizzle with truffle oil, and sprinkle with salt, black pepper, and chopped parsley.

In a medium bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper.

Whisk the ingredients together until smooth and well combined. Adjust seasoning to taste.
