Method

Shrimp Preparation

    Prepare the Poaching Liquid

    In a large pot, combine 4 cups of water, the juice of the lemon (squeeze and add), bay leaves, black peppercorns, and salt. Bring to a boil over medium-high heat.

    Poach the Shrimp

    Once the water is boiling, add the jumbo shrimp. Reduce the heat to medium and cook the shrimp for about 2-3 minutes or until they turn pink and opaque. Be careful not to overcook.

    Cool the Shrimp

    Remove the shrimp from the pot with a slotted spoon and transfer them to a bowl of ice water to stop the cooking process. Let them cool for a few minutes.

    Peel and Devein

    Once cooled, peel the shrimp, removing the shells and deveining them if necessary. Set aside on a platter.

Cocktail Sauce Preparation

    Mix the Ingredients

    In a medium bowl, combine 1 cup of ketchup, 2 tablespoons of horseradish, 1 tablespoon of lemon juice, 1 teaspoon of Worcestershire sauce, and 1 teaspoon of hot sauce. Stir until well blended.

    Adjust Seasoning

    Taste the cocktail sauce and add salt to taste. Mix well.

Serving

    Plate the Dish

    Arrange the poached shrimp on a serving platter and serve with the cocktail sauce on the side for dipping.
