Preparing the Prime Rib

    Season the Meat

    Generously coat the USDA Angus Prime Rib of Beef with kosher salt and black pepper. Make sure to cover all sides of the meat for an even flavor. Let it rest at room temperature for at least 1 hour before cooking.

    Preheat the Oven

    Preheat your oven to 450°F (232°C) to prepare for roasting the prime rib.

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes. Then, reduce the oven temperature to 325°F (163°C) and continue to roast until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.

    Rest the Meat

    Once the desired internal temperature is reached, remove the prime rib from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute.

Making the Natural Beef Jus

    Prepare the Stock

    In a large pot, combine beef bones, chopped onion, carrots, and celery. Add thyme and bay leaf. Pour in the water and bring to a boil over high heat.

    Simmer the Stock

    Reduce the heat to low and let the stock simmer for 4-6 hours, skimming off any impurities that rise to the surface. Strain the liquid and reserve the jus.

Preparing the Horseradish Cream

    Mix the Cream

    In a bowl, combine the prepared horseradish, sour cream, and fresh lemon juice. Mix well and refrigerate until ready to serve.
