Preparing the Shrimp

Poaching the Shrimp
In a medium saucepan, combine the dry white wine, water, lemon (cut in half), bay leaf, and salt. Bring the mixture to a simmer over medium heat.

Cooking the Shrimp
Once the poaching liquid is simmering, add the shrimp to the pot. Cook for about 2-3 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook.

Cooling the Shrimp
Remove the shrimp from the poaching liquid and transfer them to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes.

Draining the Shrimp
Once cooled, drain the shrimp and pat them dry with a paper towel.
Making the Cocktail Sauce

Mixing the Sauce
In a small bowl, combine the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Mix well until smooth.

Seasoning the Sauce
Taste the cocktail sauce and add salt to your preference. Mix again to incorporate.
Serving

Plating the Dish
On a serving plate, arrange the poached shrimp. Serve with a small bowl of cocktail sauce on the side.
