Oysters Preparation

Clean the Oysters
Thoroughly rinse the fresh oysters under cold water to remove any sand or debris. Use a brush to scrub the shells if necessary.

Shuck the Oysters
Using an oyster knife, carefully insert the blade into the hinge of the oyster shell. Twist the knife to open the shell and slide the knife along the top shell to cut the muscle, allowing the top shell to be removed.
Classic Mignonette Preparation

Prepare the Mignonette
Finely chop the shallots and place them in a small bowl. Add the red wine vinegar and crushed black peppercorns. Stir to combine and let sit for at least 15 minutes to allow the flavors to meld.
Cocktail Sauce Preparation

Make the Cocktail Sauce
In a mixing bowl, combine the ketchup, horseradish, lemon juice, and hot sauce. Mix well until smooth. Adjust horseradish and hot sauce to taste according to your preference.
