Method

Lobster Stock Preparation

    Prepare the Lobster Shells

    In a large pot, add the lobster shells and cover with water.

    Add Vegetables and Herbs

    Add chopped carrot, celery, onion, smashed garlic, bay leaves, black peppercorns, and thyme to the pot.

    Simmer the Stock

    Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour.

    Strain the Stock

    After simmering, strain the stock through a fine mesh sieve to remove solids. Set aside.

Bisque Preparation

    Combine Stock and Sherry

    In a large saucepan, add 4 cups of the prepared lobster stock and 1 cup of sherry. Bring to a gentle simmer.

    Incorporate Amaretto

    Stir in the tablespoon of amaretto, allowing it to blend with the stock.

    Add Cream

    Slowly stir in the heavy cream, mixing well.

    Add Lobster Meat

    Fold in the chopped cooked lobster meat and season with salt and black pepper to taste.

    Heat Through

    Allow the bisque to heat through for about 5-10 minutes without boiling, ensuring all ingredients are warm.

    Ladle the lobster bisque into bowls and serve hot.
