Main Ingredients

Horseradish Cream

Beef Jus

Method

Preparing the Prime Rib

  1. 1

    Season the Beef

In a bowl, combine kosher salt, black pepper, garlic powder, rosemary, and thyme. Rub the olive oil on the prime rib, then coat it generously with the salt mixture, ensuring all sides are covered.

  2. 2

    Rest the Beef

Let the seasoned prime rib rest at room temperature for at least 2 hours before cooking. This ensures even cooking.

  3. 3

    Preheat the Oven

Preheat your oven to 450°F (230°C).

  4. 4

    Roast the Prime Rib

Place the prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (165°C) and continue to roast for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

  5. 5

    Rest the Meat

Remove the roast from the oven, cover it loosely with aluminum foil, and let it rest for at least 20 minutes before slicing.

Making Horseradish Cream

  1. 6

    Mix Ingredients

In a bowl, combine the prepared horseradish, sour cream, lemon juice, and salt. Mix well to combine.

  2. 7

    Chill

Cover the horseradish cream and refrigerate until ready to serve.

Preparing Beef Jus

  1. 8

    Roast Beef Bones

In a roasting pan, roast the beef bones at 400°F (200°C) for about 30 minutes until browned.

  2. 9

    Prepare the Stock

In a large pot, combine the roasted bones, chopped onion, carrot, celery, water, bay leaf, and peppercorns. Bring to a simmer over medium heat.

  3. 10

    Simmer

Reduce heat to low and let the stock simmer for at least 2 hours, skimming off any foam that rises to the surface.

  4. 11

    Strain the Jus

Once done, strain the liquid through a fine mesh sieve, discarding the solids. Adjust seasoning with salt if necessary.
