Method

Preparation of the Base

  1. 1

    Make Simple Syrup

In a medium saucepan, combine water and granulated sugar. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let cool.

  2. 2

    Mix Juices

In a large mixing bowl, combine the fresh lemon juice and fresh orange juice. Stir well to combine.

  3. 3

    Combine with Syrup

Once the simple syrup has cooled, pour it into the bowl with the juice mixture. Stir to combine.

Flavoring the Sorbet

  1. 4

    Add Basil

Finely chop the fresh basil leaves and add them to the juice and syrup mixture. Stir well.

  2. 5

    Incorporate Zests

Add the lemon zest and orange zest to the mixture, along with a pinch of sea salt. Mix thoroughly.

Freezing the Sorbet

  1. 6

    Chill the Mixture

Cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours to chill.

  2. 7

    Freeze

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  3. 8

    Final Freeze

Transfer the churned sorbet to an airtight container and freeze for at least 4 hours or until firm.
