Tempura Batter

Green Beans

Kabayaki Dipping Sauce

Method

Tempura Batter Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk until well combined.

  2. 2

    Add Beer

Gradually add the cold beer to the dry ingredients, mixing gently until just combined. Do not overmix; some lumps are okay.

Frying Green Beans

  1. 3

    Prepare Green Beans

Trim the ends of the fresh green beans and rinse them under cold water. Pat them dry with a paper towel.

  2. 4

    Heat Oil

In a deep pot or large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 5

    Batter and Fry

Dip each green bean into the tempura batter, allowing excess batter to drip off. Carefully place the battered green beans into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown.

  4. 6

    Drain Excess Oil

Using a slotted spoon, remove the fried green beans and place them on a plate lined with paper towels to drain excess oil.

Kabayaki Dipping Sauce Preparation

  1. 7

    Combine Ingredients

In a small saucepan, combine soy sauce, mirin, sugar, and sake. Bring to a gentle simmer over medium heat, stirring until the sugar is dissolved.

  2. 8

    Thicken Sauce

In a small bowl, mix cornstarch with water until smooth. Gradually add this mixture to the saucepan while whisking continuously. Simmer for an additional 2-3 minutes until the sauce thickens.

  3. 9

    Cool and Serve

Remove the sauce from heat and let it cool slightly. Serve the tempura green beans with the kabayaki dipping sauce on the side.
