For the Fried Fish

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Add the Beer

    Gradually whisk in the beer until the batter is smooth and well combined. Let it sit for about 10 minutes.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Fish

    Dip each cod fillet into the batter, allowing excess batter to drip off. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

For the Fries

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips resembling fries.

    Soak the Fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Fry the soaked and dried potato strips in batches for about 3-4 minutes until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

For the Tartar Sauce

    Mix the Ingredients

    In a small bowl, combine mayonnaise, pickle relish, lemon juice, and Dijon mustard.

    Add salt and black pepper to taste, mixing well to combine.
