Soup Preparation

    Caramelize the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 30-40 minutes. Lower the heat if they start to burn.

    Add Garlic and Herbs

    Once the onions are caramelized, add minced garlic, thyme, bay leaves, salt, and pepper. Stir and cook for an additional 2-3 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine and scrape up any browned bits from the bottom of the pot. Allow the wine to reduce for about 5 minutes.

    Add Beef Stock

    Pour in the beef stock and bring the mixture to a simmer. Allow it to simmer for about 30 minutes, stirring occasionally.

Crostini Preparation

    Prepare the Baguette

    Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices. Brush both sides with olive oil.

    Arrange the slices on a baking sheet and bake for about 10-12 minutes, flipping halfway through, until golden and crisp.

Final Assembly

    Remove the bay leaves from the soup. Ladle the soup into bowls, top each with a few crostini, and generously sprinkle with shredded Gruyère cheese.
