Corn Pudding Preparation

    Cook the Chorizo

    In a skillet over medium heat, remove the casing from the chorizo and crumble it into the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and cooked through.

    Mix the Batter

    In a large mixing bowl, combine the corn kernels, cooked chorizo, shredded cheddar cheese, eggs, milk, cornmeal, baking powder, salt, and black pepper. Mix until fully combined.

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Bake the Pudding

    Pour the corn pudding mixture into a greased 9x9 inch baking dish. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Lime Crema Preparation

    In a small bowl, mix together the sour cream, lime juice, lime zest, and salt until smooth and well combined. Adjust seasoning to taste.
