Method

Burrito Filling

  1. 1

    Cook the Turkey Chorizo

In a skillet over medium heat, add the turkey chorizo. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.

  2. 2

    Scramble the Eggs

In a bowl, whisk together the eggs. Pour the eggs into the skillet with the chorizo and cook, stirring gently, until the eggs are fully cooked, about 3-4 minutes.

  3. 3

    Add Cheddar Cheese

Sprinkle the cheddar cheese over the cooked egg and chorizo mixture. Stir until the cheese is melted and well combined.

  4. 4

    Assemble Burritos

Lay out a flour tortilla and spoon a generous amount of the chorizo and egg mixture onto the center. Top with pico de gallo and a drizzle of paprika aioli. Fold in the sides and roll tightly to form a burrito.

Breakfast Potatoes

  1. 5

    Prepare the Potatoes

Wash and dice the potatoes into small cubes.

  2. 6

    Season and Roast

In a bowl, toss the diced potatoes with olive oil, paprika, salt, and pepper. Spread the potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes or until golden and crispy, stirring halfway through.

Citrus Salad

  1. 7

    Prepare the Citrus

Peel and segment the mixed citrus fruits, removing any seeds. Cut into bite-sized pieces.

  2. 8

    Mix the Salad

In a bowl, combine the citrus segments and honey. Toss gently to coat the fruit in the honey.

  3. 9

    Garnish with Mint

Chop the mint leaves and sprinkle over the citrus salad before serving.
