Burrito Filling

Cook the Turkey Chorizo
In a skillet over medium heat, add the turkey chorizo. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.

Add Cheddar Cheese
Sprinkle the cheddar cheese over the cooked egg and chorizo mixture. Stir until the cheese is melted and well combined.

Assemble Burritos
Lay out a flour tortilla and spoon a generous amount of the chorizo and egg mixture onto the center. Top with pico de gallo and a drizzle of paprika aioli. Fold in the sides and roll tightly to form a burrito.

Prepare the Potatoes
Wash and dice the potatoes into small cubes.

Season and Roast
In a bowl, toss the diced potatoes with olive oil, paprika, salt, and pepper. Spread the potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes or until golden and crispy, stirring halfway through.
Citrus Salad

Prepare the Citrus
Peel and segment the mixed citrus fruits, removing any seeds. Cut into bite-sized pieces.

Chop the mint leaves and sprinkle over the citrus salad before serving.
