Berry Puree Preparation

Prepare the Black Currant Puree
In a small saucepan, combine the black currants and water. Cook over medium heat until the currants break down and become soft, about 10 minutes. Remove from heat and let it cool slightly.

Blend and Strain
Using a blender, puree the black currants and water mixture until smooth. Strain the puree through a fine-mesh sieve to remove seeds and skins. Stir in honey until fully dissolved.
Honey Syrup Preparation

Make the Honey Syrup
In a small saucepan, combine equal parts honey and water. Heat gently until the honey is fully dissolved in the water. Let it cool before using.

Mix the Cocktail
In a shaker, combine the black currant puree, fresh lime juice, and honey syrup. Fill the shaker with ice and shake vigorously for about 15 seconds.

Serve the Cocktail
Strain the mixture into a glass filled with ice. Top off with ginger beer and gently stir to combine. Garnish with fresh mint leaves and pieces of candied ginger.
