    Season both sides of the filet mignon liberally with kosher salt and freshly ground black pepper. Press the seasoning into the meat to adhere.

    If using, rinse the asparagus and baby potatoes. Trim the asparagus ends and cut the baby potatoes in half.

Cooking the Filet Mignon

    Heat a cast-iron skillet over medium-high heat. Add the olive oil and heat until shimmering but not smoking.
