Method

Preparation

  1. 1

    Season the Steak

Pat the bone-in New York strip steak dry with paper towels. Generously season both sides with kosher salt, black pepper, and garlic powder. Let the steak sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

Cooking

  1. 2

    Heat the Pan

In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

  2. 3

    Sear the Steak

Once the oil is hot, carefully place the seasoned steak in the skillet. Sear the steak for 4-5 minutes without moving it, allowing a nice crust to form.

  3. 4

    Flip and Add Aromatics

Using tongs, flip the steak over. Add the fresh rosemary to the skillet. Continue cooking for another 4-5 minutes for medium-rare, adjusting time for desired doneness.

  4. 5

    Baste the Steak

If desired, reduce heat to medium, add butter to the skillet, and use a spoon to baste the melted butter over the steak for the last 2 minutes of cooking.

  5. 6

    Rest the Steak

Once cooked to your liking, remove the steak from the skillet and let it rest on a cutting board for 10 minutes to allow the juices to redistribute.

Serving

  1. 7

    Serve

Slice the steak against the grain and serve with lemon wedges on the side for added brightness.
