Method

Preparation

  1. 1

    Prepare the Filet

Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

  2. 2

    Season the Meat

Pat the filet dry with paper towels. Rub the olive oil all over the filet. In a small bowl, mix the salt, black pepper, and garlic powder together and then generously season the filet on all sides.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat for about 5 minutes until it is hot.

  2. 4

    Sear the Filet

Once the skillet is hot, place the seasoned filet in the pan. Sear for 4-5 minutes on one side without moving it to develop a crust.

  3. 5

Flip and Cook to Desired Doneness

Flip the filet over and sear for another 4-5 minutes for medium-rare. Adjust the cooking time if you prefer it more well done.

  4. 6

    Add Optional Toppings

For extra flavor, add a tablespoon of butter and a sprig of fresh rosemary to the pan during the last minute of cooking. Baste the filet with the melted butter.

Resting

  1. 7

    Rest the Filet

Remove the filet from the skillet and transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for 5-10 minutes. This allows the juices to redistribute.

Serving

  1. 8

    Slice and Serve

Slice the filet against the grain and serve it on a warm plate. Enjoy your perfectly cooked filet mignon!
