Pork Belly Preparation

Season the Pork Belly
Start by preheating your slow cooker. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika. Rub this spice mixture all over the pork belly.

Cook the Pork Belly
Place the seasoned pork belly in the slow cooker, and pour the apple cider vinegar and chicken broth over it. Cover and cook on low for 8 hours or until the pork is tender.

Crisp the Pork Belly
After cooking, remove the pork belly from the slow cooker and let it rest for 10 minutes. Preheat a grill or skillet on medium-high heat. Sear the pork belly slices for 2-3 minutes on each side until crispy.

Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and place on paper towels to drain excess fat.

Assemble the Sandwiches
On a slice of toasted bread, spread a tablespoon of mayonnaise. Layer with lettuce, slices of tomato, crispy bacon, pork belly slices, and avocado. Top with another slice of bread.
