Potato Chips

Method

Prepare the Potato Chips

    Slice the Potatoes

    Wash and slice the Russet potatoes thinly using a mandoline or sharp knife.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Carefully add the sliced potatoes in batches to the hot oil. Fry until golden brown and crispy, about 3-5 minutes per batch.

    Drain and Season

    Remove the chips from the oil and drain on paper towels. While still hot, sprinkle with salt, black pepper, garlic powder, and onion powder.

Assemble the Nachos

    Layer the Ingredients

    On a large serving platter or baking sheet, layer the fried potato chips. Top with shredded corned beef, followed by the beer cheese sauce and sauerkraut.

    Drizzle with Dressing

    Finally, drizzle the Thousand Island dressing over the top of the nachos.

    Serve

    Serve immediately while hot and enjoy your Irish Nachos!
