Pulled Pork Preparation

    Searing the Pork

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the pork shoulder with salt, black pepper, and cayenne pepper. Sear the pork on all sides until browned (about 5-7 minutes). Remove from pot and set aside.

    Cooking the Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté for about 3-4 minutes until softened and fragrant.

    Braising the Pork

    Return the seared pork to the pot. Add Guinness beer, brown sugar, and paprika. Bring to a simmer, then cover and reduce heat to low. Cook for 4-5 hours until the pork is tender and shreds easily with a fork.

    Shredding the Pork

    Once cooked, remove the pork from the pot and shred with two forks. Return the shredded pork to the pot and mix with the juices.

Apple Slaw Preparation

    Mixing the Slaw

    In a large bowl, combine shredded cabbage, grated carrot, and julienned apple.

    Creating the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and black pepper.

    Combining Slaw and Dressing

    Pour the dressing over the cabbage mixture and toss until well combined. Refrigerate for at least 30 minutes before serving.

Assembly

    Building the Sandwich

    Slice the brioche buns in half. On the bottom half, add a generous portion of the Guinness braised pulled pork.

    Top the pork with a scoop of apple slaw, sprinkle bleu cheese crumbles, and finish with fried onion strings.
