Preparation of Catfish

Marinate the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Breading
In a shallow dish, combine the cornmeal, flour, cayenne pepper, salt, and black pepper.

Bread the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well coated.

Fry the Catfish
In a large skillet, heat oil over medium-high heat. Fry the breaded catfish fillets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Preparation of Roasted Jalapeno Remoulade

Make the Remoulade
In a bowl, combine mayonnaise, roasted jalapenos, lemon juice, garlic powder, and salt. Mix well until smooth. Adjust seasoning to taste.
Assembly of Sandwich

Assemble the Sandwich
On the bottom half of each brioche bun, layer shredded romaine lettuce, catfish fillet, tomato slices, and a generous dollop of roasted jalapeno remoulade. Top with the other half of the bun.

Serve the catfish sandwiches immediately with additional remoulade on the side if desired.
