Method

Prepare the BBQ Chicken

    Marinate Chicken

    In a bowl, combine the olive oil, salt, black pepper, and BBQ sauce. Add the chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.

    Grill Chicken

    Preheat the grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked. Brush with additional BBQ sauce during the last minute of cooking.

Prepare the Pork Belly

    Marinate Pork Belly

    In a bowl, mix together the brown sugar, soy sauce, minced garlic, and grated ginger. Add the pork belly and ensure it is well coated. Marinate for at least 30 minutes.

    Cook Pork Belly

    Preheat your grill or a stovetop skillet over medium heat. Sear the pork belly for about 4-5 minutes on each side until crispy and cooked through. Allow to rest for a few minutes before slicing.

Grill Peaches and Avocado

    Brush the cut sides of the peaches with honey. Place on the grill for about 3-4 minutes until grill marks appear and they soften.

    Prepare Avocado

    Slice the avocado and drizzle with lemon juice to prevent browning. Set aside.

Prepare the Asian Slaw

    Mix Slaw Ingredients

    In a large bowl, combine the shredded cabbage, shredded carrots, sliced green onions, rice vinegar, sesame oil, and salt. Toss well to combine and let it sit for 10 minutes for flavors to meld.

Assembly

    Build the Sandwich

    Slice the ciabatta rolls in half. Layer the grilled chicken, sliced pork belly, grilled peaches, avocado, and a generous amount of Asian slaw. Top with fresh cilantro and close the sandwich.

    Serve the BBQ Chicken & Pork Belly sandwich warm with extra BBQ sauce on the side if desired.
