Roast the Garlic
Preheat the oven to 400°F (200°C). Cut the top off the whole garlic bulb to expose the cloves. Drizzle with olive oil and wrap it in aluminum foil. Roast in the oven for 30-35 minutes until soft and caramelized.
Prepare the Hummus
Once the garlic is cool enough to handle, squeeze the roasted cloves into a food processor. Add the chickpeas, tahini, olive oil, lemon juice, ground cumin, salt, and water. Blend until smooth, scraping down the sides as necessary. If the hummus is too thick, add more water a tablespoon at a time until desired consistency is reached.
Toast the Pita
While the hummus is blending, cut the pita bread into wedges. You can grill or toast them until golden brown and crispy.
Serve
Spoon the hummus into a serving bowl, drizzle with additional olive oil if desired, and serve with the warm pita wedges and a side of Calabrian chili pesto.
