    Prepare the Fish

    Clean and scale the Branzino, then make three diagonal slits on each side. Rub the fish inside and out with olive oil, salt, and pepper.

    Prepare the Asparagus

    Trim the ends of the asparagus and toss them with olive oil, salt, and pepper.

Grilling

    Grill the Fish

    Preheat the grill to medium-high heat. Place the fish on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily.

    Grill the Asparagus

    Place the asparagus on the grill alongside the fish. Grill for about 4-5 minutes, turning occasionally, until tender and slightly charred.

Sauce Preparation

    Make the Sauce Grenobloise

    In a small saucepan, melt the butter over medium heat. Add lemon juice and capers, stirring until combined. Remove from heat and stir in the chopped parsley.

Serving

    Transfer the grilled Branzino to a serving platter. Arrange the grilled asparagus and sliced heirloom tomatoes around the fish. Drizzle the sauce grenobloise over the fish before serving.
